If you wish to eat something sweet during the fast but also want to take care of health, then kuttu flour pudding can be a perfect dish for you. It is rich in iron, fiber and protein, which keep the body energy as well as healthy. The better it is in taste, the easier it is to make.

Essential Material:
Kuttu flour – 1 cup
Desi Ghee – 4 tablespoons
Water – 2 cups
Jaggery
Cardamom Powder – 1/2 teaspoon
Sliced fruits (almonds, cashews, raisins) – 2 tablespoons
Coconut (optional – Finely grated) – 1 tbsp

Way to make pudding

First, put 2 cups of water in a pan to heat it and add grated jaggery to it. Allow the jaggery to dissolve in water and boil until it melts completely. Sieve this jaggery water once so that if there is any dirt, it will leave. Now keep it separate.

On the other hand, heat desi ghee in a pan. When the ghee becomes well heated, add kuttu flour to it and fry on low flame continuously. Keep in mind that do not let the flour burn. The dough will slowly start changing the color and the fragrance will start coming from it. When the dough is light golden and well, then understand that it is ready.

Now add hot jaggery water to this roasted dough. Keep in mind that during this step, the heat is slow and you should be cautious because they can splash fast as soon as they add water to the flour. Now keep stirring continuously with a spoon of wood so that the knots do not fall. In a while, this mixture will start to thicken and become a texture like halwa.

Now add cardamom powder and chopped fruits to it. If you want, you can also add a little grate coconut, which will make the taste even better. Mix everything well and cook for 1-2 minutes. When the pudding starts leaving ghee and looking different from the shore, then turn off the gas.

Now your hot and delicious kuttu flour pudding is ready. Serve it hot. This pudding is a perfect and energetic dish to eat especially during fast, Navratri or any fast.
